I have been handing out dozen's of these in the past few weeks, just so I stop eating them!
They are so yummy you can't stop at 1,2,3 or even 10...so here is the recipe for all of you who have asked.
makes 12 pies ( use a muffin tray )
3/4 cup sugar
1/3 plain flour
1/4 teaspoon salt
2 cups milk
3 egg yolks (beaten)
2 tablespoons butter
1 1/4 teaspoons vanilla exact
2 sheets puff pastry
Start thawing two sheets of puff pastry on bench ( should only take 10mins)
Get your muffin tray ready and line with butter. (so pies dont stick)
Place sugar, flour, salt & 1 cup of milk in saucepan and start stirring on medium heat on stove.
Keep stirring until all combined. Add second cup of milk and stir until it starts to bubble.
Take off the heat and stir in beaten egg yolks. ( it should be smooth like custard) Keep stirring!
Place back on heat and add butter and vanilla exact. Stir until smooth. Take off heat.
Put oven onto 170c
Place pastry in each muffin tin. (work quickly so pastry doesn't dry out)
Put finely sliced banana in each pie and a little cinnamon. Fill with custard. Spinkle with cinnamon
Bake for 12-15mins (check them at 12mins)
Cool and eat whole tray!!
For mixed berry pies, just replace banana with unfrozen Sara Lee mixed berry satchels.
You can also do just one big pie and slice it up
Sooooo.. quick and easy to make and they taste like they came from the bakery.
